The University of Illinois offers its students a field site program in Italy:

The sixteen-credit-hour Food and Culture in Rome program is designed to provide students with a unique opportunity to learn about the culture, production, preparation, and on-site marketing of Italian food and wine in the heart of Italy. The program curriculum focuses on the study of regional cuisine and its ingredients, architecture and the history of art, politics and social dynamics, as well as the language and culture of Italian literature. In-class lessons are combined with guided visits within the city of Rome, meetings with subject-area experts, excursions outside of Rome, and hands-on classes in the kitchen. Lecture topics include, but are not limited to, the international success of the Mediterranean eating habits, food trends, and gender issues. Students are introduced to strategies and practical skills for food and wine communication and documentary narration through exposure to different media and technologies, guided visits to television studios, and the creation of online blogs.
